  • 00:00: Good day! Welcome to my channel! Today I'm going Today I'm making a very tasty "Winter Fairy Tale" cake. This cake has cranberry, this is all about snow, New Year Eve and winter fairy tale Let's get started! For a cake we'll need 2 middle-sized eggs
  • 00:43: 300 g of flour, 200 g of sugar 200 g of sour cream (any) 200 g of sweetened condensed milk, 20 g of cocoa powder 10 g of baking powder and 1/5 tsp of baking soda, add the baking powder to the flour the soda and cocoa powder mix it all well and then sift
  • 01:17: gradually adding the sugar, whip up the eggs til light and airy pale in colour and doubled in volume with a mixer running, add the sweetened condensed milk the sour cream and mix for another 1-2 min then add the flour mixture
  • 01:47: and quickly mix till smooth batter, you can use a mixer but briefly and short I'm going to bake the cake in a 24 cm in diameter springform pan which I've lined with parchment, left the sides ungreased you can swirl you pan to make it even bake in a 180 degree Celsius oven for 40-45 min

  • 04:31: a half of the mixture on each layer and leave till the filling is cooled down for the cream we'll need 250 ml of milk 250 ml of heavy whipping cream 180 g of sweetened condensed milk 30 g of starch (any)
  • 05:05: 30 g of sugar (to taste) 5 g of gelatine and 1 tsp of vanilla extract add a little bit of cold milk to the starch and leave to soak up
  • 05:35: put the condensed milk and the sugar into a sausepan add the vanilla extract in the very end add the rest of the milk and mix it all well, add the starch mixture put on a stove and heat up till thickens once thickened, cook for another 2-3 min
  • 06:09: to cook out the starch put the cream into a separate bowl warm up the gelatine till dissolved add the gelatine mixture to the hot cream and mix well
  • 06:39: let it cool to 40 degree Celsius take the heavy whipping cream keep it in the fridge before you need it you can also cool down a bowl and the beaters of a mixer I'll also add 30 g of icing sugar (to taste)
  • 07:09: whip it up till stiff peaks form add the whipped cream to the custard cream in batches and mix very quickly put the bottom layers on a serving dish pour a half of the cream, even it out
  • 07:44: put the second layer on top pour the second half of the cream and even it out as well soak the last layer with the sugar syrup put the third layer on top
  • 08:19: and put the cake into the fridge for several hours so the cream is set I'm going to decorate the cake with candied cranberry we'll need 150 g of cranberry, 100 g of sugar 50 ml of water and 2-3 tbsp of icing sugar add the water and the sugar into a sausepan make sure the sugar is dissolved
  • 08:49: boil it for 1-2 minutes once it started boiling remove the sausepan from heat and let it cool a bit, not till cold but it shouldn't be hot as well so the berries don't burst and leave it like this for 1-1.5 hours it must cool down completely, put it on a sieve to drain the extra syrup
  • 09:22: and loosely lay it out on a piece of parchment and let it dry, put some icing sugar onto a plate I'll also add some sugar for texture add the cranberry and dip in the mixture lay out the cranberries
  • 09:54: and let it dry completely I will decorate the cake with some egg white glaze we'll need 1 egg white and 100-150 g of icing sugar you can make sugar glaze or chocolate glaze
  • 10:25: or you can divide the cream into 3 portions, and spread the cream on top of the cake gradually add the icing sugar to the egg white
  • 10:55: spread the glaze over the top decorate the top with our candied cranberries it's beautiful
